Gressingham Duck is renowned for its rich flavour, succlent meat and beautifully crisp skin when roasted.
Preheat oven to 180/Gas Mark 6.
Place the Duck on a wire rack in a roasting tray and roast for approximately 1 hour 45 minuites.
Drain off excess fat during cooing if nrcessary.
