A tasty whole chicken ideal for a classic weekend roast.
St George Chickens are reared in small groups by farmers passionate about animal welfare. Reared in light airy barns, these chickens enjoy many things such as toys and perches for their enrichment as well a natural cycle of night and day – a far cry from factory farmed, battery chickens. We recognise that not everyone’s budget stretches to opting for free range, so being able to offer our customers a St George’s chicken allows us to stand by our welfare values whilst being easier on the purse.
Butcher’s tip
Initially roast your chicken ‘upside’ down, so that all the juices generated in cooking seep into the breast meat. Turn it over 30-40minutes before the end of cooking to allow the skin to crisp and become golden.
Cooking Guide:
Pre heat oven to 180°C/Gas Mark 4.
Peel and halve a whole onion, sandwich a knob of Butter between the two halves and place in the cavity of the bird.
Roast the chicken over a trivet of root veg for 15mins per 500g plus 15minutes until juices are clear and the thickest part of the meat piping hot
